Zucchini Nut Bread

I love making homemade bread! In fact, I would choose homemade bread over store-bought bread any day. It’s usually cheaper too! I’ve tried several kinds but this one seems to come around more than the rest. And since I cook/bake a good bit, I only had to buy a zucchini to make this delicious treat!

Zucchini Nut Bread

Here is what you will need:

1 1/2 cups flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp ground nutmeg
1 beaten egg
1 cup sugar
1 tsp vanilla
1 cup finely chopped medium zucchini
1/4 cup cooking oil
1/2 cup chopped nuts (I used a mixture of pecans & walnuts)
**If you’re allergic to nuts, you can omit these!

1. Preheat oven to 350
2. Finely chop the zucchini & set aside for later

3. Combine flour, cinnamon, baking soda, salt, baking powder, & nutmeg. Hollow out the center a little bit and set aside.

4. In another medium bowl combine beaten egg, sugar, vanilla, chopped zucchini, and oil.  Add this mixture into the flour bowl. Stir together but don’t over mix. Once it’s all incorporated, that all you need!

5. Fold the nuts into this mixture.

6. Spoon into greased loaf pan.

7. Bake at 350 for 50-55 minutes or until a wooden toothpick comes out clean when inserted near the center. Cool for about 10 minutes and then enjoy!
